Meat-Stuffed Potato Croquettes

Ingredients for the mashed potato:

  • 500 grm mashed potatoes
  • 1 egg yoks
  • Salt and pepper to taste
  • Vegetable oil for cooking

Ingredients for the filling:

  • 1 small onion chopped
  • 2 cloves of garlic, finely chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 carrot, diced
  • 200g minced meat or chicken
  • 1 green onion chopped
  • oil for saute
  • 1 tbs of flour mixed with 2 tbs of water

Coating:

  • 1 white egg
  • bread crumb

Direction:

  • In a bowl, mix the ingredients with mashed potatoes
  • Saute the onion and the garlic for 1 minute
  • Add the carrot
  • Add the green onion and the mixture of flour and water
  • Mix well and set aside
  • Take 1 tbs of mashed potatoes, add the filling, cover it and form an oval
  • Put each croquette in white egg then breadcrumbs
  • Rest in the refrigerator for 20 minutes (optional)
  • Deep fry until golden brown
  • Serve with chili sauce

Kaastengels

Ingredients:
350g butter
4 egg yolks
250g cheese (old edam)
400g flour

For garnish:
1 egg yolk
grated cheese



Directions:

1. Mix butter with a mixer then add the grated cheese and the egg yolks
2. Begin kneading the mixture together with flour
3. Put the dough in the refrigerator for about 1 hour
4. Roll the dough and cut into a small rectagles about 1x3cm
5. Pre-heat the oven to 160°C
6. Brush each one with the egg yolk and sprinkle with grated cheese
7. Bake until golden brown for about 20 minutes

Martabak Telur

makes 40 small squares martabak

Ingredients:

-10 Feuille de brick (a thin crêpe-like dough)
-10 eggs
-400g ground beef
-5 green onion roughly chopped
-2 onion finely chopped
-2 shallots finely chopped
-2 cloves of garlic crushed
-salt
-pepper to taste
-a pince of sugar
-1 tbs of soy sauce
-2 tbs of curry or garam masala
-Oil for sauté and fry the martabak

Direction:

  • Sauté the onion, shallots and garlic then add the beef
  • Add salt, pepper, soy sauce and curry or garam masala then add the sugar
  • Stir well and put the chopped green onion. Let it for 2 minutes and the put aside
  • Put 2 tbs of the mixture of beef and green onion in a bowl and add 1 egg. Mix well and put in the middle of a feuille de brick. Wrap in like envelop and fry in medium heat oil for about 2 minute each side (until brown)
  • Repeat the operation to have 10 big squares of martabak. Cut into 4 small squares

Bakwan Sayur

Ingredients:
- 50g minced meat (or prawn)
- 100g any combinations of vegetables: carrots, zuccinis, cucumber cut lengthwise into very thin strips (julienne), soy bean
- 2 tbs flour
- 1 egg
- 1 chicken broth block- salt, pepper, coriander powder to taste
- cooking oil

Direction:

  • Mix all the ingredients except the cooking oil, in a bowl
  • Take a big spoon of the mixture and fry in a medium heat oil until golden brown
  • Serve with chili sauce

Pain perdu (French toast)

Biasanya anak2 senang makan pain perdu pada saat goûter (sore hari).
Bahan
-6 buah roti (roti yg sudah basi lebih baik)
-1/2 liter susu cair
-2 butir telur
-gula (gula vanili) secukupnya
-mentega utk menggoreng
-dihidangkan dg: gula, selai, nutella , dll

Cara:

  • Kocok telur, susu cair dan gula vanili.
  • Panaskan mentega di dalam penggorengan datar.
  • Celupkan roti ke campuran tsb, tiriskan dan langsung digoreng di kedua sisi.
  • Disantap dengan gula, selai atau nutella.

Lumpia

Bahan:
30 lembar kulit lumpia (feuille de froment kalo di p'cis)
100g ayam filet
100g udang
50g taoge
1-2 wortel potong spt korek api
2 siung b putih
1 st jahe bubuk
1 st kari
1 st gula
garam, merica secukupnya
minyak untuk menumis dan menggoreng
1 putih telur untuk merekat

Cara

  • Blender daging ayam dan udang dengan bawang putih.
  • Sementara itu tumis wortel dan taoge sampai setengah layu, kemudian masukan blenderan daging ayam dan udang.
  • Masukan jahe, kari, gula, aduk.
  • Masukan garam dan merica. Dinginkan.
  • Isi tiap lembar kulit lumpia dengan 1 sdm adonan isi. Lipat sambil gulung hingga rapi.
  • Rekatkan ujungnya dengan putih telur.
  • Goreng dalam minyak panas dan banyak hingga kuning kecokelatan.

Pastel

Resep ini cepat dan praktis buatnya, krn versi gue, adonannya beli jadi dan masaknya di oven (ngga digoreng jadi rambut ngga bau hu hu).
Bahan:
-4 rol ready made puff pastry/pâte feuilletée
-daging cincang 100g
-wortel 2 buah, potong kotak2
-2 telur rebus, potong 20
-Seledri, cincang
-1 blok penyedap rasa (maggie)
-1 sm bawang putih bubuk
-2 st kari
-garam & merica secukupnya
-minyak utk menumis

Cara membuat:
Isi:

  • Tumis wortel sebentar, kemudian masuk penyedap rasa dan sedikit air. Masak hingga setengah matang/air menguap, angkat dan sisihkan.
  • Tumis daging sampai matang, kemudian masukan bawang putih dan kari. Kemudian masukan wortel dan seledri. Tambahkan garam dan merica secukupnya.
  • Panaskan oven 220°C. Sementara itu dari masing2 rol adonan, dg bantuan mangkuk bentuk 5 bulatan (atau lebih tergantung diameter bulatan).
  • Masukan 1 sm isi + potongan telur rebus ke dlm bulatan. Lipat menjadi dua dan pilin ujungnya.
  • Sebelum dimasukan ke dlm oven, tusuk pastel dg pisau spy ada lubang udara (untuk menghindari pastel terbuka). Masak sampai pastel kekuningan (+/- 15 menit)
