Vegetable Flan

Ingredients:

4 zuccinis, washed and sliced
2 onions, sliced
1 red pepper, cut into long strips
20 crushed black olives without stones
4 eggs
200 ml of crème fraiche (sour cream)
grated cheese (gruyère)
salt, pepper to taste
3 tbs olive oil
thyme or other herbs

Direction:

  • Put the oil into a pan over a medium heat and put the onions, zuccinis and the red pepper. You can cook them by steps as they are not all fitted into the pan when uncooked. Cook in low heat for about 20 minutes. In the middle of cooking, add the olives, salt, pepper and the thyme. Stir well. Let it cool down.
  • Preheat the oven on to 200°C.
  • Beat the eggs, add the crème fraiche then the grated cheese (save some). Add the vegetables into the egg mix and stir delicately.
  • Pour the mixture into the pyrex, sprinkle with grated cheese and place into the oven for 35 minutes.
